Inspection Date: Aug. 10

  • Some foods were stored in contact with soiled equipment or utensils. A container with fried eggs and shrimp was stored in a pan of shrimp noodles and a broccoli container was stored in direct contact with ready-to-eat food on a steam table.

Ritz-Carlton Pentagon City Elbows Cafeteria

Inspection Date: Aug. 10

  • The food establishment is not under the immediate control of a Northern Virginia certified food manager. Some food was stored in contact with soiled equipment or utensils. A container of diced tomatoes was observed in the lettuce on the cold salad bar.

Inspection Date: Aug. 10

  • The food establishment serves or sells raw or undercooked food and the permit holder does not inform consumers of the significantly increased risk associated with consuming such foods. The steak is cooked to 140 degrees  and that information needs to be added to the menus.

  • The surface of the large cutting board is no longer effectively cleaned and sanitized. Strip mall trash bins have a buildup of soil and are becoming attractants for insects.

Inspection Date: Aug. 10

  • Surfaces of the cutting boards are not clean. Shredded cheese and sliced cheese in the walk-in refrigerator holding at the improper temperature of 47 degrees, while potentially hazardous foods should be maintained at 41 degrees or less.

  • Sliced cheese and milk holding at the improper temperature of 45 degrees, while potentially hazardous foods should be maintained at 41 degrees or less.

  • Rodent droppings were observed in the front storage hallway.
  • A very strong odor was present during inspection in the basement office/storage room.

  • A food employee failed to wash his or her hands before donning gloves for working with food.
