Gluten-Free Soft Baked Peanut Butter Cookies

Try this simple, gluten-free recipe for making soft baked peanut butter cookies with just four little ingredients (most likely already in your cupboard).

 

Are you suffering from cabin fever brought on by the latest snow storm? Or are you just one of those die-hard Peanut Butter fans like my mom and my college roommate, obsessed with everything Peanut Butter flavored? Well, then you’ve got to try baking these super easy, rich and delicious, Soft Baked Peanut Butter Cookies that only calls for four ingredients that you definitely, most-likely, almost positively already have in your kitchen.

1 cup peanut butter
1 cup sugar
1 egg
1 tsp vanilla extract

Wah-Bam! Easy, right? Not only are they easy, but they’re gluten-free and take only 10 minutes to bake!

  • Preheat your oven to 325 degrees.
  • Mix all four ingredients in a large mixing bowl.
  • Scoop out about a teaspoon of cookie dough onto a baking sheet. Then, wet the back of a fork with water, and dip into sugar. Flatten out cookies with this sugar-covered fork, making basically an X with your fork imprints.
  • Slide into oven and bake for 10-11 minutes, or until golden brown.

Let them cool for a few minutes before you enjoy with an iced cold glass of milk.

This recipe is a classic from my childhood, and because we’re not a sweet-tooth-infused family. It's basically one of the only things my mom would actually bake from scratch. That didn’t matter; this lovely little recipe, originally found on Mr. Food did the trick.

Serving size should be about 2 dozen cookies, although with this particular batch, I made my cookies super-sized and used all the cookie dough to make a total of 12 cookies. Unfortunately, I also thought I should keep them in them two minutes longer and ended up over-cooking them.

It's okay though, they're still yummy! And now I know for next time.
